Samosas: Samosas are a popular Indian fast food made with a crispy pastry shell filled with a spicy potato and pea mixture.

Ingredients:

  •     2 cups all-purpose flour
  •     1/2 cup ghee or vegetable oil
  •     1/2 teaspoon salt
  •     1/2 cup water
  •     1 cup boiled and mashed potatoes
  •     1/2 cup peas
  •     1 teaspoon cumin powder
  •     1 teaspoon coriander powder
  •     1/2 teaspoon red chili powder
  •     Salt to taste
  •     Oil for frying

Instructions:

  1. In a mixing bowl, combine the flour, ghee or oil, and salt. Mix well and add water gradually to form a dough. Knead the dough for a few minutes until it becomes smooth.
  2. Cover the dough and let it rest for 30 minutes.
  3. In a separate mixing bowl, combine the mashed potatoes, peas, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  4. Roll out the dough into a thin sheet and cut it into circles using a cookie cutter or a lid.
  5. Place a spoonful of the potato mixture in the center of each circle and fold it into a triangle shape. Press the edges to seal.
  6. Heat oil in a deep frying pan over medium heat. Carefully place the samosas in the hot oil and fry them until they turn golden brown.
  7. Remove the samosas from the oil and place them on a paper towel to drain the excess oil.
  8. Serve hot with chutney or ketchup.

    Dosa: Dosa is a popular South Indian fast food made with fermented rice and lentil batter.

Ingredients:

  •     1 cup urad dal (black lentils)
  •     1 cup rice
  •     Salt to taste
  •     Oil for cooking

Instructions:

  1. Soak the urad dal and rice separately in water for at least 6 hours or overnight.
  2. Drain the water and grind the urad dal to a fine paste. Repeat the same process with the rice.
  3. Mix the two pastes together and add enough water to make a smooth batter. Add salt to taste.
  4. Cover the batter and let it ferment for at least 8 hours or overnight.
  5. Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan and spread it evenly using the back of a ladle.
  6. Drizzle some oil around the edges and cook until the bottom turns golden brown. Flip the dosa and cook the other side for a few seconds.
  7. Remove the dosa from the pan and serve hot with chutney or sambar.
   

Chaat: Chaat is a popular street food in India made with a combination of crispy fried dough, vegetables, and tangy chutney.

Ingredients:

  •     1 cup all-purpose flour
  •     1/2 cup semolina
  •     1/2 teaspoon salt
  •     1/4 cup ghee or vegetable oil
  •     1/2 cup water
  •     2 cups boiled and diced potatoes
  •     2 cups boiled and diced chickpeas
  •     1 cup diced tomatoes
  •     1 cup diced onions
  •     1/2 cup tamarind chutney
  •     1/2 cup mint chutney
  •     Salt to taste
  •     Oil for frying

Instructions:

  1. In a mixing bowl, combine the flour, semolina, salt, ghee or oil, and water. Mix well and knead the dough for a few minutes
